Broccoli cabbage is very tender and therefore requires only short cooking times. The stalks of broccoli cabbage can be peeled and used with it. The florets of broccoli cabbage cook faster than the stems. If the broccoli cabbage is quenched briefly with cold water after cooking, it will retain its strong colour. Broccoli cabbage tastes good as a vegetable and can be used for baking in casseroles. Broccoli cabbage also tastes very good in soup or stew.
