Book Wheat Flour (Buckwheat, French) Sarrasin, ital. grano saraceno, span. trigo sarraceno) is produced from the seeds of the True Book Wheat. Book wheat flour is often used for Russian recipes such as the famous blinis, American pancakes or French galettes pancakes. Book wheat flour alone is unsuitable for baking, because it is gluten-free and therefore the gluten is missing. You should therefore always add a different flour. When preparing dishes with Buch wheat flour, the dough should swell long enough before it is baked or roasted.
