Balsamic vinegar or balsamic vinegar vinegar is called completely Aceto Balsamico. This special vinegar comes from Modena, an Italian town in the Reggio Emilia. It is made from Trebbiano grapes, which are thickened to 30-70% by boiling. Balsamic vinegar is available in white and dark brown. Only after months of aging in wooden barrels of different wood species and fermentation does the balsamic vinegar acquire its special sweet-sour taste and dark colour. Since the term balsamic vinegar is not protected, one does not always get the original Aceto Balsamico Tradizionale di Modena in Germany. Only under the aforementioned designation can one be sure to receive an original product from the region.
