Tuna is usually offered as a tuna steak by the fishmonger. It is definitely worth using fresh tuna, as frozen tuna cannot be compared to this quality. The meat of fresh tuna is firm, dark and very aromatic. Tuna can be gently roasted, grilled or steamed and is often combined with tomato sauce and pasta in Mediterranean cuisine. Tuna can also be used in many ways in Asian cuisine, e.g. in the wok. For sushi, you should always demand tuna in sushi quality, as the tuna can then be eaten raw.
