Spanish Recipes

Some Spanish recipes, like Pollo con Naranjas (chicken with fresh oranges), Paella (rice pan with different kinds of meat, crustaceans and vegetables) and others I got from friends from Spain. The breakfast in Spain usually consists only of a cup of coffee and possibly pastries. The best way to bridge the lunchtime until dinner is with tapas (appetizers), which range from olives, chorizo (hot paprika sausage), the very delicious air-dried Serrano ham to chicken legs. In Spain, unlike here in Germany, people do not eat warm until late in the evening. If you cook your own Spanish recipes, you should treat yourself to a good bottle of Spanish red wine. In the coastal regions, fish specialities, mussels, crustaceans and squid such as Sepia con Cebolla (cuttlefish with onions) are of course served. In the interior there are then innumerable specialities of vegetable, meat and poultry dishes. Also rabbit (Conecho) is prepared gladly. No dish should be without a fresh mixed salad plate as a side dish. Everybody knows tortillas with eggs and potatoes, or as dessert the sweet Leche Flan. On high heat the hearty gazpacho (vegetable soup), served ice-cold, tastes best. We also spent some hot summer evenings with ice-cold sangria (red wine with citrus fruits and spices), which are filled with mineral water.
