North German Recipes

With the North German cuisine it is difficult to make exact divisions into the different regions, since many dishes are eaten both in Hamburg, as well as East Frisia or e.g. Bremen. Sometimes there are only minor differences. In Hamburg, for example, boiled potatoes are served with green cabbage, while in East Frisia sweet potatoes are served and in Bremen pinkel (sausages) are served with it. That is why we have listed here all recipes which cannot be clearly assigned to a certain region, but which are eaten everywhere in Northern Germany. The cuisine in Northern Germany is usually heavier than in other regions. Potatoes, meat and various root and cabbage varieties are mainly used. On the coasts of the Baltic and North Seas, however, fresh fish specialities are often prepared.
