Hessian Recipes

Hessian cuisine is characterised by down-to-earth home-style fare, which is often prepared with regional farm products. So dishes with potatoes, cabbage, beans, leeks and bacon form the basis for many Hessian recipes. Fruit is also cultivated in Hessen, with apples playing a major role. The Äppelwoi or Ebbelwoi (fermented apple wine), for example, is known beyond national borders. Also popular are specialities such as Handkäs mit Musik or the famous Frankfurt Green Sauce, the so-called Grie Sauce, which traditionally consists of seven herbs and is often served with boiled potatoes or boiled beef. It is difficult to speak of the typical Hessian cuisine, as it is very varied and each region has its own recipes. The cuisine in southern Hesse is also strongly influenced, for example, by Rheinhessen cuisine or Franconian cuisine.
