Nigiri Sushi With Tuna

For making nigiri sushi with tuna use very fresh tuna steaks from good quality. At the seafood store where you buy the tuna, let them know you like to use the tuna for sushi. Rinse the sushi rice with cold water until the water runs clear. Put the sushi rice in a small pot and add the water. Season with sugar and salt, cover and bring to a boil. Reduce the heat to low and let the rice soak for about 20 minutes. Put the sushi rice on a plate and season with rice wine vinegar. Wet your hands and form small pieces of rice and put them on a sushi board. Add a few drops of water to the wasabi powder and make a paste. Using a Japanese knife or a sharp kitchen knife, cut the tuna steak across the streak into stripes. Spread the wasabi paste in a thin layer on one side of the tuna stripes. Put the tuna stripes with the wasabi side down on the rice, slightly press on. Cut half of a nori seaweed sheet in about 1/2 inch thick stripes. Wet the stripes slightly with water. Wrap each nigiri sushi piece with a stripe of nori seaweed sheet. Serve the nigiri sushi with tuna with wasabi and pickled ginger. On the side serve 3 small bowls with soy sauce. That allows everyone to season the nigiri sushi with tuna to his taste.
