Potato Roesti




Ingredients:
600 g / 20 oz
100 g / 3 1/3 oz
20 g / 2/3 oz

1 tbsp
waxy potatoes
bacon
clarified butter
Salt
milk

Serves 3 - 313 cal per serving
Prep-time: 15 min. - Total-time: 30 min.
Using waxy potatoes for making Potato Roesti is best. Cook potatoes in the skin the day before. Peel potatoes and finely shred them or use a ricer. Dice bacon. In order to make this a vegetarian dish just omit the bacon. In a coated pan heat clarified butter, add bacon and fry until crispy. Reduce heat to low. Add shredded potatoes and season with salt. Using a spatula stir and flip potatoes until covered with fat. It's best to work in three batches. Add the first batch of shredded potatoes to the pan, with the spatula form a flat cake and press slightly. Drizzle with milk and cover the Roesti tightly with a plate. Bake for about 15 minutes on lowest setting. Remove Potato Roesti from pan and serve with crispy side up. Repeat with remaining potatoes.
