Pear and Ricotta Salad




Ingredients:

Lettuce salad
radicchio salad
pears
lemon juice
ricotta cheese
walnuts
walnut oil
balsamic vinegar
orange juice
honey
pepper, salt

Serves 3 - 603 cal per serving

Preferably use ripe pears to prepare the 'Pear and Ricotta Salad'. Rinse the butter lettuce; dry thoroughly using a salad spinner. Pick to pieces and put in a bowl. Remove the outer leaves from the radicchio salad. Pick the radicchio salad to bite-sized pieces and mix with the butter lettuce. Arrange the salad on large plates. Wash and dry the pears, cut in quarters and remove the core. Now cut the pear quarters lengthwise in slices and drizzle with freshly squeezed lemon juice. Arrange the pears on top of the salad. Stir the ricotta cheese until smooth and pour over the salad. Sprinkle with chopped walnuts. Make a dressing from walnut oil, dark balsamic vinegar and freshly squeezed orange juice. Season with pepper and salt; sweeten with honey. Drizzle the dressing over the 'Pear and Ricotta Salad' and serve immediately.
