You'll get best results if using extra-fine corn flour or special tortilla flour for this Tortilla - Basic Recipe. Put corn flour in a mixing bowl and combine with wheat flour and salt. Bit by bit add lukewarm water; knead the dough for about 3 minutes. Form a roll and cut into 6 equal pieces. Shape each piece into a ball and flatten. Dust the tortilla on both sides with corn flour and roll out until 7.5 inch in diameter. Put on top of each other until ready for baking. Heat a non-stick skillet without oil. Bake each tortilla on medium heat until blistering and slightly vaulted around the edge. Turn over the tortilla and bake a few more seconds. In between wipe the pan with a paper towel to keep the flour from scorching. Immediately fill the tortillas with desired filling and fold or roll them up.
