Most suitable for hot chocolate is using the chocolate you prefer to eat.
The better the quality of the chocolate, the better is the taste of the hot chocolate. Rinse a pot with cold water. Pour in 3/4 cup milk. With a sharp knife lengthwise slice open a quarter of a vanilla bean. Using a teaspoon scratch out the pulp of the vanilla bean. Add the pulp together with the vanilla bean and sugar to the milk. Bring to a boil stirring constantly. Remove from heat and take out the vanilla bean. Break the chocolate into little bits and dissolve in the hot milk. Pour in 1 tablespoon slightly whipped cream and stir. The fat from the whipping cream intensifies the taste and flavor of the hot chocolate.
