When seasoning the pfeffernuesse consider that the full flavor of the pfeffernuesse will develop not until the second day. Therefore be careful and approximate the right amount of seasoning. Whisk the egg and sugar until frothy. Add chopped almonds and approx. 1/4 tsp cinnamon. Add a point of a knife full of white ground pepper. Better less than too much. Season with the zest of an untreated lemon. Combine flour and baking powder and add to the egg mix; knead. The dough will be sticky. Line a baking tray with parchment paper. Slightly flour your hands and form balls from the dough; put on the baking tray. Bake the pfeffernuesse in the pre-heated oven for 15 minutes at 180 C / 355 F. Let cool the pfeffernuesse a little. Mix powdered sugar with lemon juice and brush on the pfeffernuesse. Let dry completely before storing the pfeffernuesse in a cookie tin.
