Poached Eggs

bay leaves

black peppercorns

Serves 3 - 118 cal per serving

To make poached eggs it is very important to use only very fresh eggs with viscous egg whites. In a pot combine salted water, vinegar, little bit of sugar, bay leaf, cloves, black peppercorns and simmer for 8-10 minutes. Keep the liquid just below boiling point. Remove the spices with a slotted spoon. One by one crack the eggs in a cup and carefully slide them into the liquid. Do not cook more than 3 eggs at a time. After three minutes carefully remove the poached eggs using a slotted spoon. Quickly rinse with cold water. With your kitchen scissors smooth the edges. Serve the poached eggs on a bed of scrambled eggs, spinach, yogurt sauce or a zesty tomato sauce.
