Ingredients:
125 g / 1 cup

20 g / 2/3 oz

60 g / 2 oz
9 g / 1/3 oz
plain flour
baking powder
baking soda
eggs
milk
butter, unsalted
Salt
margarine, unsalted
maple syrup

Serves 3 - 523 cal per serving
Prep-time: 30 min. - Total-time: 30 min.
Combine flour, baking powder and baking soda. Adding baking soda makes the pancakes more fluffy. If you use original American baking powder you don't have to add baking soda. The American baking powder is more active than the German baking powder. Add egg and milk to the flour mix and stir until smooth. On low temperature melt the butter and add to the pancake mix. Season with a pinch of salt and let the dough set for a while. In a coated pan melt the margarine. Add 2 tablespoons of dough for each pancake. Do not bake more than 3 pancakes at a time. Set the temperature on medium. Bake until surface of pancakes is covered with bubbles. Flip over with a spatula and bake until golden. Repeat with remaining batter, greasing pan for each batch with margarine. Keep the ready baked pancakes warm in the oven at 120 F. Makes 15 small pancakes or 3 large and thick pancakes. Serve with maple syrup for an all American breakfast.
