Hot Drink - East Frisian Tea




Ingredients:
4 tsp
1 liter / 1 quart
50 g / 1 2/3 oz
20 g / 2/3 oz
black tea
water
rock candy
whipping cream

Serves 3 - 603 cal per serving
Prep-time: 10 min. - Total-time: 10 min.
You'll need good quality, loose east Frisian tea (e.g. Buenting, Thiele, Onno Behrens. Check the Internet for those kinds of black tea). Rinse the teapot with hot water. Put 1-tsp tea for each person into the teapot and an additional one for the pot. Pour in some boiling water until the tealeaves are covered. Let steep for 3 minutes. Put the can on the teapot-warmer. Fill up with hot water. Put some rock candy (East Frisian: Kluntjes) in each teacup. (If you can't find rock candy in your local store, check the Internet). Pour the tea in each cup using a tea strainer. You can hear the crackling of the rock candy. Pour cream in a special cream spoon and hold it on the inside rim of the teacup. Now pour in the cream very carefully. Don't stir. Watch the cream spreading. This is called a cloud. (East Frisian: en wulkje). The first sip will be creamy and after that you can taste the good flavor of the tea; the sweetness comes at last. As a good host refill the tea unasked. If somebody is finished he/she will signalize it by putting the teaspoon into the cup. That's the only purpose of the teaspoon. Tip: East Frisian Water is very soft, that's why the tea tastes very good. Use high quality bottled water to prepare the tea (e.g. Evian, Dannon, etc.)
