Smoked Salmon Tartar

olive oil
lemon

bunch chives
cucumber
olive oil
white vine vinegar
pepper, salt

Serves 3 - 603 cal per serving

Salmon Tartar is easy to prepare and is a decorative item for a buffet. Dice the smoked salmon very finely. Cut a cross into the top of the tomato and pour boiling water over it. Skin the tomato, remove the seeds and dice very finely. Mix the tomato together with the diced salmon. Combine 2 tbsp olive oil with the juice of half a lemon and season with salt and pepper. Finely chop the chives and add to the salmon. Mix the salmon together with the dressing and refrigerate for about 30 minutes. Wash and dry the cucumber and then cut into very thin slices. Arrange the cucumber slices in a circle on a large platter. Mix together the olive oil, vinegar, salt and pepper to make a dressing and drizzle over the cucumber. Place the salmon tartar in the middle.
