Turkish flatbread goes well with grilled meat, is perfect for stuffing and is certainly suited for a cold buffet. Mix flour together with instant dry yeast, salt and sugar. Add olive oil and unsalted, melted butter. Knead dough and add bit by bit up to 160 ml / 5 1/3 oz lukewarm water. The dough has to come off the bowl easily and shouldn't be sticky. Let the dough rise covered in a warm place for about 50 minutes. Knead again with your hands and form a flatbread (see picture above). Put on a parchment paper lined baking tray. Pierce several times with a fork. Dust your hands with flour and slightly rub off the flatbread. Sprinkle with sesame seeds or black sesame seeds. Cover with a clean dish towel and let rise for about 20 minutes in a warm place. Pre-heat oven to 200 - 225 C / 390 - 440 F. Bake with tray set on the middle rung for about 25 minutes.
