French Plum Tart




Ingredients:
250g / 9 oz
70g / 2 1/2 oz
30g / 1 oz

Serves 6 - 302 cal per serving
Prep-time: 15 min. - Total-time: 120 min.
Combine flour (2 cups), cold butter (2/3 stick), sugar (2 tbsp), pinch of salt, egg and knead well. Add 2-3 tbsp cold water so that the dough becomes elastic. Form a ball, cover and put in the refrigerator for 1 hour. Divide the ball in 2 halves. Grease a spring pan or tart form (18 cm / 7 inch) with butter. Sprinkle easily with flour. Roll out 1 half of the dough on flour dusted working space. It should be slightly larger then the baking pan. Put on the bottom of the pan and form a high rim. Cut the plums lengthwise to remove the pit. But don't cut all the way through! Layer the plums on the dough and sprinkle with sugar. Roll out the second half of the dough and cut into 1-2 cm / about 1/2 inch thick stripes. Put the stripes onto the plums, forming a grid. Preheat the oven to 200 C / 390 F. Bake the tart on the middle rung for approx. 40 minutes. Brush some leaked juice from the plums on the grid. Bake for another 5 minutes. Let cool in the pan.
