Port Wine Creme

sugar
Vanilla sugar
port wine
orange peel
Cinnamon
amarettini cookies

Serves 3 - 603 cal per serving
Prep-time: 10 min. - Total-time: 60 min.
For Port Wine Creme first soak gelatin sheets in cold water according to package directions. (If you can't get gelatin sheets use gelatin powder. For each gelatin sheet use 2 g of gelatin powder. Use gelatin powder as described on package.) Separate the eggs. Keep the egg whites for later. Whisk egg yolk, sugar and vanilla sugar until frothy. Add port wine, orange zest and cinnamon. Drain the gelatin sheets and melt the gelatin in a small pot on low heat. Add a little bit from the egg mix to the gelatin; stir. Now add the gelatin to the rest of the egg creme. Put in the refrigerator for 5 minutes. Stir once in a while until crème starts to thicken. In a clean and fat free bowl whisk the egg whites until stiff peaks form and fold in the cream. Fill the port wine crème in port wine glasses or small red wine glasses. Let set in the refrigerator for 1 hour. Serve with amarettini cookies.
