Glazed Pork Roast

Rinse the pork roast with cold water and dry thoroughly. Peel 3 garlic cloves and quarter lengthwise. Pierce the pork roast all around and fill with garlic. Chop the sage finely. Remove the rosemary needle-like leaves from the stems. Sprinkle the herbs on the pork roast and press on firmly. Season with pepper and salt. Pre-heat the oven to 150 C / 300 F. Place the pork roast on the rack in the middle rung. Put a roasting pan filled with 1/8 l / 1/2 cup water underneath. Roast for approx. 85 minutes. By and by baste with 3/8 l / 1 1/2 cups orange juice. 1/2 hour before roasting time ends add some more garlic cloves to pan drippings. Mix orange marmalade, mustard, brown sugar and 2 tbsp orange juice. 5 minutes before the pork roast is done baste the roast with the glaze. Dissolve pan drippings with 1/8 l / 1/2 cup water and pour in a pot. Let simmer until thickened. Season to taste with orange liqueur, Tabasco and herbs. Decorate with orange slices or segments.
