Sigara Boerek (also called Sigara Boeregi) is a Turkish dish and the Yufka dough sheets are rolled up like a cigar. Yufka dough is quite similar to Phyllo dough. You can buy Yufka in well assorted oriental supermarkets or often were Turkish groceries are available. Combine the ground meat with finely chopped parsley and peppermint leaves. Stir in the tomato paste. Cut the tomato crosswise on top and douse with boiling water. Peel of the skin and remove the seeds. Dice the tomato very fine and mix with the meat. Finely dice the onion; add to the meat. Season with pepper, salt, paprika and garlic. Sprinkle the Yufka dough sheets (triangle shaped) with water as it makes rolling them up easier. Put a little of the ground meat mix on the wide side of each dough sheet. Avoid spreading it all the way to the edges, leave 1 cm / 1/3 inch blank. Roll up the Sigara Boerek two times towards the top. Now double in the sides, to keep the meat from falling out and roll up to the end. In a pan heat olive oil and fry the Sigara Boereks for 3-5 minutes until light brown. Let drain on paper towels.
