In a Teflon coated pan bring the water together with the sugar, vanilla and cinnamon to the boil. Add the unskinned almonds and continue to cook at a high temperature until the sugar starts to become dry. Stir constantly with a wooden spoon. Turn the heat down to medium and continue to stir the almonds until the sugar melts and the almonds start to caramelise. Place the almonds on a greased baking tray and with the help of 2 forks immediately spread the almonds apart. The almonds taste best when they are still warm.
