Salmon in Puff Pastry

filleted salmon
puff pastry
spinach
olive oil
butter, unsalted
onion
Garlic
pepper, salt
mozzarella
milk

Serves 3 - 603 cal per serving
Prep-time: 15 min. - Total-time: 45 min.
If using frozen salmon, allow to thaw before preparing and pat dry. Season with pepper and salt. Roll out the three pieces of puff pastry, place one piece of salmon on each of the pastry squares and wrap the fish in the pastry. Press the ends together firmly with a fork. Place the pastry on a greased baking tray. Coat the pastry with milk and bake in a hot oven at 390 degrees Fahrenheit (200 Centigrade) for approx. 30 minutes. Meanwhile wash the spinach and dry well. If you are using frozen spinach be sure to press out the liquid. Dice the onion, heat a skillet with olive oil and fry the onions until golden brown. Add the spinach and cook until tender. Season with salt and crushed garlic. Grease a casserole with butter, place the spinach into the casserole and top with slices of mozzarella. Put the casserole into the oven together with the salmon and bake for 15 minutes until the mozzarella has melted.
