Quiche Lorraine




Ingredients:
150g / 5 oz
100g/3 1/2 oz

plain flour
margarine, unsalted
salt
egg yolks
bacon
butter, unsalted
cooked ham
creme fraiche
eggs
pepper, salt
Nutmeg

Serves 3 - 870 cal per serving
Prep-time: 15 min. - Total-time: 90 min.
Combine flour, margarine, salt and egg yolk and knead to make a shortcrust pastry. Wrap the pastry and refrigerate for about 30 minutes. Meanwhile dice the bacon, melt the butter in a pan and fry the bacon until crisp. Use the fat from the bacon to grease a pie flan. Roll out the pastry on a floured board and line the base and the sides of the flan with the pastry. Prick the base with a fork several times. Sprinkle the diced bacon and chopped ham over the base. Beat the eggs and the creme fraiche together and season well with salt, freshly ground pepper and freshly ground nutmeg. Fill the flan with the egg mixture. Preheat the oven to 200 C / 400 F and bake on a middle rack for about 55 to 60 minutes. Serve the Quiche Lorraine while still hot together with a glass of red or white wine.
