Fish with a Herb-Walnut CrustFlorentines Fondue

Ingredients:

Vanilla sugar
whipping cream
mixed candied fruit
slivered almonds
dark chocolate

Serves 25 - 83 cal per serving
Prep-time: 20 min. - Total-time: 30 min.
Melt the butter in a Teflon coated pan and add the sugar and vanilla sugar. Brown the sugar, stirring constantly, until caramelised. Add the cream, continuing to stir. Cook the mixture until it is homogenous and slightly thickened. Add the finely chopped candied fruit and the slivered almonds and mix well. Using a teaspoon place small portions of the mixture on each of the oblaten on a greased tray. If you have difficulties getting the thin wafers the mixture can be placed straight onto a baking tray lined with non-stick baking parchment. Leave a space between the heaps to allow the mixture to spread. Bake in a hot oven at 200 C / 400 F for approx. 12 minutes. Before they have cooled you can use a round cutter to press the Florentines into a rounder shape. Melt the chocolate and drizzle over the Florentines.
