Rinse the kale thoroughly and remove the stalks. Blanch for 5 min. in boiling water, quench and drain. Melt lard (as a substitute you can use oil, but lard adds more flavor to the kale) in a large pot and fry the finely chopped onion until glassy. Add the kale and braise. Season with salt and mustard, add the broth. Reduce the heat to low. Let the kale simmer for about 60 min. In the last 15 minutes add the smoked pork chops and cover with kale. So they can cook gently. Also good with the kale are 'Mettenden'; Mettenden are a special German cured and smoked sausage with strong flavor made from minced pork. But if you need to watch your diet you are better off serving the kale with either smoked pork chops or 'Mettenden' instead of both. Meanwhile cook small potatoes in the skin. Let the potatoes cool down a little and peel. Cut in chunks, leave small ones whole. In a large skillet heat the shortening / oil and fry the potatoes until crisp; add salt. On medium heat caramelize the sugar. Continuously sway the pan to avoid scorching the potatoes.
