Combine the quark, lemon juice and fruit juice, stir until smooth. If you use a fresh pineapple roll the whole fruit with a little bit pressure to get more juice. After cutting the pineapple, save the juice. If using canned pineapple there is enough juice in the can.
Add the sugar to the quark and stir well until all sugar is dissolved. Beat the whipping cream until stiff and fold in the quark creme. Finally add the pineapple chunks and stir in carefully. Top with chocolate sprinkles.
